Zucchini Cake with Fresh Cheese

Serves 4 to 6 people

Ingredients

  • 450 g zucchini + a few extra slices for decoration
  • 1 small onion
  • 1 garlic clove
  • 120 g fresh goat cheese (or 160 g fresh chèvre)
  • 1 sachet of chives (or fresh chives)
  • 5 eggs
  • 1 fillet of olive oil
  • Butter (for the mould)
  • Salt, pepper

Method

  1. Wash the zucchini, cut off the ends and grate them coarsely. Press them lightly to remove some of the water. Chop the onion and garlic finely.
  2. In a pan, heat a little olive oil. Add the grated zucchini, onion and garlic. Sauté for 5 to 8 minutes while stirring. Season with salt and pepper. Set aside to cool.
  3. Preheat the oven to 180°C (350°F). Grease a cake tin with butter.
  4. In a salad bowl, mix the cooled zucchini with the fresh cheese, chopped chives, and the 5 whole eggs. Mix well.
  5. Pour the mixture into the prepared cake tin. Arrange a few thin slices of fresh zucchini and some herbs on top.
  6. Bake for about 20 to 25 minutes. The cake should be firm and golden when done. Let it cool slightly before unmoulding. Serve warm or cold, with a side salad or as an appetizer.

Our Tips This recipe is very customizable according to your taste: you can add fresh herbs (coriander, dill, parsley, etc.), a little garlic, or keep some zucchini slices to decorate the top of the cake before baking. If you don’t have fresh goat cheese, you can use another soft cheese. It’s delicious served with a drizzle of olive oil and fresh herbs.
