Chocolate Cake

Makes 700 g

Ingredients:

  • 150 g dark baking chocolate
  • 150 g icing sugar (powdered sugar)
  • 150 g softened butter
  • 125 g plain flour
  • 5 egg whites
  • 1 pinch of salt

Method:

  1. Preheat the oven to 180°C (thermostat 6).
  2. Melt the chocolate in a bain-marie (double boiler). In a bowl, mix the sugar and softened butter, then add the melted chocolate. Gradually incorporate the flour, mixing well.
  3. In a large bowl, whisk the egg whites vigorously until stiff peaks form. Add a pinch of salt, then gently fold them into the previous mixture.
  4. Pour the batter into a buttered and floured cake tin. Bake for 45 minutes. Check doneness by inserting a knife into the centre — the blade should come out clean. If not, bake for another 10 minutes.
