It makes 38 biscuits and takes 10 minutes preparation + 10 minutes cooking.

Ingredients

  • 175 g (¾ cup) butter
  • 50 g (¼ cup) sugar
  • 180 ml (¾ cup) honey
  • 5 ml (1 tsp) salt
  • 225 g (1¾ cup) all-purpose flour
  • 75 g (⅓ cup) sliced almonds (effilées)
  • 5 dried figs (figues séchées)

Instructions

  1. Preheat the oven to 180 °C (350 °F). Line two baking sheets with parchment paper.
  2. Cream the butter, sugar and honey together until pale and fluffy.
  3. Finely chop the dried figs and add them to the creamed mixture along with the sliced almonds. Mix well.
  4. Sift the flour, baking powder and salt together, then gradually add to the mixture. Mix until a smooth dough forms.
  5. Place a teaspoon of the dough onto the prepared baking sheets (forming small circles about 8 cm / 3 inches in diameter). Flatten each one lightly with your hands to create thin wafers.
  6. Bake for 8 to 10 minutes, or until the edges turn golden. Remove from the oven and let cool slightly on the baking sheet before transferring to a wire rack. Store in an airtight container once completely cooled.

These are thin, crisp almond wafers studded with sweet dried figs and honey — a delicious French-style biscuit perfect with tea or coffee!
