Belgian Waffles

Ingredients

  • 3 eggs
  • 200 ml milk (can be dairy, plant-based, or half-and-half)
  • 80 g butter
  • 200 g all-purpose flour
  • 3 tbsp sugar
  • 1 tsp vanilla sugar (with real vanilla)
  • 1 tsp baking powder
  • A splash of vanilla extract (optional)
  • A pinch of salt

 Instructions

  1. Melt the butter and let it cool slightly.
  2. Separate the eggs into yolks and whites.
    • Beat the yolks with sugar, vanilla sugar, and vanilla extract until pale and creamy.
    • Mix in the milk, then the melted butter.
    • Sift in the flour mixed with baking powder and stir briefly until smooth.
  3. Whip the egg whites with a pinch of salt until stiff peaks form (they should hold when the bowl is tilted).
    • Gently fold them into the batter using upward motions.
    • Do not overmix, the batter should stay airy.
  4. Cook the waffles in a waffle maker.
    • Place cooked waffles on a rack (for example, in a slightly open oven) to keep them crisp.
    • If they cool too much, briefly reheat in the waffle maker before serving.

 Serving Suggestion

Top with vanilla ice cream and seasonal berries for maximum joy per bite.
