Chocolate Cake with Jelly, Cookies & Cherries

 Ingredients

  • 400 g sour cream (25–30%)
  • 150 g dark chocolate (or milk chocolate)
  • 100 g heavy cream
  • 15 g gelatin
  • 100 g tea biscuits
  • 2 packs cherry-flavored jelly
  • 300 g frozen cherries
  • 50 g sugar
  • 8 g cornstarch

Instructions

  1. Prepare jelly using half the recommended water, let set, then cut into pieces.
  2. Cook cherries with sugar and starch, boil and simmer 2 minutes → cool.
  3. Melt chocolate, cool slightly.
  4. Bloom gelatin in cream, then dissolve.
  5. Mix sour cream with chocolate until smooth.
  6. Add gelatin, mix again.
  7. Fold in jelly cubes and broken biscuits.
  8. Pour into mold, chill overnight.
  9. Top with cherry mixture before serving.
