Dough:
– 500 g flour
– 250 ml hot water
– 4 tbsp oil
– A pinch of salt
Filling:
– 4 medium-sized boiled potatoes
– 180 g cottage cheese
– 1 egg
– Salt and pepper to taste
Instructions:
1. Mix the flour with hot water, oil, and salt. Knead into a smooth dough and let it rest for 30 minutes.
2. Mash the boiled potatoes and mix them with the cottage cheese, egg, salt, and pepper until well combined.
3. Roll out the dough thinly. Cut out circles of your desired size. Place a teaspoon of filling in the center of each circle, then seal the edges firmly with your fingers or a fork.
4. Bring a large pot of salted water to a boil. Add the dumplings and cook for 5–6 minutes after they float to the surface.
5. Serve with your favorite toppings — melted butter, sour cream, or especially delicious with a bacon-sour cream sauce.
**Yield**: About 22 large dumplings from this recipe.
