No-Bake Cottage Cheese Cake with Caramel

 Ingredients

Base:

  • 300 g biscuits (sandwich-style recommended)
  • 50 g butter

Cottage Cheese Layer:

  • 640 g cottage cheese (room temp)
  • 310 g caramel (e.g., dulce de leche)
  • 100 g sour cream (20–30%)
  • 130 g butter
  • 12 g gelatin + 72 g cold water

Top Layer:

  • 250 g caramel
  • 5 g gelatin + 30 g water

 Instructions

  1. Crush biscuits, mix with melted butter, press into pan.
  2. Bloom gelatin for both layers.
  3. Blend cottage cheese, caramel, sour cream, and melted butter until smooth.
  4. Add melted gelatin, mix, pour onto base.
  5. For topping: mix melted gelatin with caramel (warm slightly if needed).
  6. Pour on top and refrigerate overnight.

 Best served slightly softened at room temperature.
