Oreo–Strawberry Cottage Cheese Cake

 Ingredients

Base:

  • 450 g Oreo cookies
  • 80 g butter

Cottage Cheese Layer:

  • 800 g cottage cheese
  • 400 g white chocolate
  • 300 g heavy cream (30–35%)
  • 4 g gelatin + 24 g water
  • 160 g butter
  • 150 g Oreo cookies (chopped)

Strawberry Layer:

  • 400 g strawberries (fresh or frozen)
  • 40 g sugar
  • 20 g cornstarch
  • 25 g butter

 Instructions

  1. Mix crushed Oreos with butter, press into pan.
  2. Bloom gelatin.
  3. Melt chocolate with hot cream, add gelatin.
  4. Blend with cottage cheese and melted butter until creamy.
  5. Fold in chopped Oreos, pour over base, chill.
  6. Cook strawberries with sugar and starch until thickened (2 min after boiling).
  7. Add butter, cool, spread on cake.
  8. Chill overnight.
