Spicy Cashew Curry Chicken Tenders

#### Ingredients

– 2 chicken tenderloins (or chicken fillets/tenders), about 150 g total

– Curry powder (quantity to taste, for seasoning and toasting)

– Salt

– Pepper

– 30 g olive oil

– 2 knobs of butter

– Unsalted cashews (quantity to taste, around a handful for toasting and topping)

– Plain/natural yogurt (quantity to taste, for the base of the plate)

– Fresh cilantro (coriander) leaves, for garnish

 

#### Instructions

1. Cut the chicken tenderloins into pieces if desired (or leave whole).

2. Season the chicken with curry powder, salt, and pepper.

3. Heat the olive oil and butter in a pan over medium-high heat.

4. Add the seasoned chicken and sear it on all sides for about 4 minutes, without overcooking it (it should remain tender).

5. While the chicken cooks, place the unsalted cashews in another pan. Toast them for 2 minutes, adding a pinch of curry powder during toasting.

6. To plate: Spread a layer of plain yogurt on each plate.

7. Arrange the seared, spiced chicken tenders on top of the yogurt.

8. Sprinkle the toasted curried cashews over the chicken.

9. Finish with fresh cilantro leaves and a light dusting of extra curry powder if desired.
