Almond Fondants

It makes 20 biscuits and takes 15 minutes preparation + 15 minutes cooking.

Ingredients

  • 150 g (⅔ cup) butter
  • 150 g (¾ cup) sugar
  • 5 ml (1 tsp) almond extract
  • 190 g (1¾ cup) all-purpose flour
  • 5 ml (1 tsp) baking powder
  • 25 g (¼ cup) sliced almonds (effilées)

Instructions

  1. Preheat the oven to 190 °C (375 °F). Lightly butter two baking sheets.
  2. Melt the butter in a large casserole (saucepan) over low heat. Remove from heat and mix in the flour and baking powder until smooth. Add all the other ingredients and mix well to form a dough.
  3. With the help of a teaspoon, form small balls (boulettes) about the size of a walnut. Roll them lightly in the sliced almonds to coat them. Place the balls on the prepared baking sheets, spacing them apart. Flatten each one slightly with the palm of your hand.
  4. Bake for 12 to 15 minutes, or until the biscuits are lightly golden. Let them cool slightly on the baking sheet before transferring to a wire rack.

The biscuits should be slightly soft when warm and will firm up as they cool. Enjoy!
