It makes 40 biscuits and takes 15 minutes preparation + 15 minutes cooking.
Ingredients
- 125 g (½ cup + 2 tbsp) butter
- 15 ml (1 tbsp) corn syrup (sirop de maïs)
- 170 g (¾ cup + 2 tbsp) sugar
- 5 ml (1 tsp) vanilla extract
- A few drops of red food coloring (optional, for a cherry tint)
- 60 g (⅓ cup) chopped glacé cherries (confites, hachées)
- 170 g (1⅓ cup + 2 tbsp approx.) all-purpose flour
- 5 ml (1 tsp) baking powder
Instructions
- Preheat the oven to 180 °C (350 °F). Line two baking sheets with parchment paper.
- Melt the butter in a large saucepan. Remove from heat, then add the sugar and corn syrup. Stir together until well combined.
- Add the chopped glacé cherries while the mixture is still warm, along with the vanilla extract and a few drops of red food coloring if using. Mix vigorously. Sift the flour and baking powder separately, then add them to the mixture. Stir until a smooth dough forms.
- Form small balls (about the size of small walnuts) with the dough. Place them on the prepared baking sheets, spacing them apart. Flatten each ball slightly with a fork.
- Bake for 12 to 15 minutes, or until lightly golden. Remove from the oven and let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
These are soft, chewy cherry-flavored biscuits with bits of candied cherries inside — perfect for tea time or as a sweet treat!
