Cherry Biscuits

Makes 40 biscuits • 15 minutes prep • 15 minutes baking

INGREDIENTS:

  • 125 g (½ cup) butter
  • 12 g (1 tbsp) sugar
  • 15 ml (1 tbsp) corn syrup
  • 170 g (1⅓ cups) all-purpose flour
  • 5 ml (1 heaping tsp) baking powder
  • A few drops of vanilla extract
  • 60 g (⅓ cup) candied cherries, chopped

INSTRUCTIONS:

  1. Preheat the oven to 180 °C (350 °F). Line two baking sheets with parchment paper.
  2. Melt the butter, sugar, and corn syrup together in a saucepan. Sift the flour and baking powder separately. Pour the hot melted mixture into the dry ingredients and mix vigorously. Add the vanilla and chopped candied cherries, then shape into small balls.
  3. Place the balls on the prepared baking sheets, spacing them well apart. Flatten slightly with a fork and bake for 12 to 15 minutes. Remove from the oven and let cool on a wire rack.
