Yield: ~1 L (4 cups)
Ingredients:
500 ml (2 cups) plain 2% Greek yogurt
Zest and juice of 2 limes
125 ml (½ cup) sweetened condensed milk
5 ml (1 tsp) vanilla extract
500 ml (2 cups) 35% whipping cream
125 ml (½ cup) icing sugar
125 ml (½ cup) crushed graham crackers
½ lime, sliced (for garnish)
Instructions:
1. Make the lime base
In a bowl, mix the yogurt, lime zest, lime juice, sweetened condensed milk, and vanilla until smooth.
2. Whip the cream
In another bowl, whip the cream with the icing sugar until stiff peaks form.
Set aside half of the whipped cream for garnish.
3. Combine
Gently fold the remaining whipped cream into the yogurt mixture using a spatula.
4. Transfer
Pour the mixture into a loaf pan (about 23 x 13 cm / 9 x 5 in). Smooth the surface and cover with plastic wrap.
5. Freeze
Freeze for 4–6 hours, until firm.
6. Garnish & serve
Top with the reserved whipped cream, crushed graham crackers, and lime slices.
