GRILLED CHEESE reinvented

INGREDIENTS

  • 4 slices of country bread
  • 2 tbsp margarine
  • 60 g (2 oz) of feta, bocconcini or fresh mozzarella, sliced or crumbled
  • Sundried tomatoes, chopped
  • Pitted black olives
  • A few fresh basil leaves
  • A few red onion rings

PREPARATION Butter one side of each slice of bread with the margarine. On the unbuttered side of two slices, spread the cheese. Garnish with the rest of the ingredients. Cover with the other two slices of bread, buttered side outward.

Grill both sides until the cheese is melted and the bread is golden brown.

VARIANT You can replace the country bread with rye bread or ciabatta, the sundried tomatoes and olives with sautÊed mushrooms, and the cheese with old cheddar, blue cheese or Gruyère.
